I am having trouble locating the encoder cables in Australia, I was hoping someone might be able to give me another name for them? I can find the connectors easily enough, although I wouldn't know how to go about inserting wires and creating a cable myself.

OK, I think I've worked it out a bit more - if others are in the same boat, crimping and creating the cables isn't too complicated, though it requires bloody expensive crimping tools from some searches I've done. Here's a video on crimping molex connectors -

I guess you just buy the molex 50-57-9405 connectors and little metal inserts from your country's specialty supplier and make up some wires yourself with fine pliers.

@chris-annin

I also found these which I think might be ok -

Mouser No: 490-CUI-3132-1FT

Mfr. No: CUI-3132-1FT

But they are not long enough. There is a 6ft version that might be ok too:

Mouser No: 490-CUI-3131-6FT Mfr. No: CUI-3131-6FT But I am not 100% sure they are the same, someone would need to look up the datasheets on these which are available on the mouser site for each item and look at them.

That’s what I ordered. The idea is to use the assembled molex connector ends and solder additional wires to gain the required length for the specific joint that the encoder is assembled too.

As you noted, it’s more expensive to buy the individual components, then assemble it all. The prefabricated cable reduces cost and assembly.

robotshop.com is another supplier for these cables, if available in your location.
